Italian sweet recipe to make at home for La Befana!
Hi guys and welcome back to my blog! Do love the feast of the Epiphany? In Italy, there are two kind of people happy for this feast: children that wait for it all year long in order to receive gifts and sweets, and adults because it is another occasion to celebrate one more time after Christmas Day with their family and friends!
This is an italian ancient tradition : a very old woman flying on a worn broom, visit children in the night between 5 and 6 January (the night of the Epiphany) and fill the stockings left by them, hung on the fireplace or near a window. Accordin to the tradition, children who have been good during the year receive gifts, while children who have been naughty receive coal …or sweet coal
In this post I want to teach you an italian sweet recipe to make at home for la Befana!
70 g egg white icing
Black food colouring
700 g sugar
230 g water
To prepare egg white icing:

1 egg white (35 g)
5 drops of lemon juice
200 g icing sugar
To prepare the egg white icing you have to take a large bowl and combine all ingredients until the mixture is smooth and thick. If you want to be sure of the results take a knife and immerge it into the icing, if it leaves a clean cut you made a good job! if it is necessary you can add more sugar, and then add the black food colouring.
Take a rectangular pan and line it with greased parchment paper. Pour water and sugar in a deep saucepan until 1/3 of the height. Bring to boil until 126ºC. Remove from heat and add the egg white icing. At this point you have to stir in circles until it forms foam and keep stirring until foam surfaces again.
Pour the mixture into the lined pan. When it’s baked you have to break the carbon in pieces
